精製方法
樹上完熟
樹上完熟(Dry On Tree)
樹上完熟(Dry On Tree)は、コーヒーチェリーを樹上で完全に乾燥させる精製方法。トミオ・フクダのバウ農園(Fazenda Bau)の ドライ・オン・ツリーが有名である。
樹上完熟はコーヒーノキに負担がかかるため、バウ農園では、3年サイクルで区画を替えながら生産している。
コーヒーの精製方法 ウォッシュト(湿式)、ナチュラル(乾式)、セミ・ウォッシュト/パルプト・ナチュラル/ハニー/スマトラ式(半水洗式)、ファーメンテーション(発酵)
